Ingredients

With beef

  • Bread crumbs
  • Garlic
  • Oregano
  • Parsley
  • Spring onions
  • Tomato paste
  • Rosemary
  • Black olives
  • Egg
  • Beef mince
  • Capsicum
  • Cheddar cheese

Without beef

  • Couscous
  • Garlic
  • Oregano
  • Dried cumin
  • Parsley
  • Spring onions
  • Black olives
  • Chickpeas
  • Fresh tomato
  • Zucchini, diced
  • Capsicum
  • Feta cheese

Method

  1. Take the tops off the raw capsicums and de-seed them.
  2. For the meat free capsicums, prepare the couscous as per the packet instructions.
  3. For the meat filled capsicums, place the raw beef mince in a bowl with garlic, oregano, rosemary, black olives, breadcrumbs, herbs, spring onions and tomato paste.
  4. For the meat free capsicums, cook the couscous as per the packet instructions. Mix in a bowl with the herbs, the diced zucchini, fresh tomatoes, couscous, spring onions, black olives and chickpeas.
  5. Add the mixtures to the prepared raw capsicums and sprinkle with the cheese.
  6. Top the stuffed capsicums with the lids, place on a tray and put into a hot oven until cooked through.
