Ingredients

With meat

  • Beef steaks
  • Onion
  • Tomato paste
  • Garlic cloves
  • Tinned, diced tomatoes
  • Tomato passata
  • Basil leaves
  • Oregano
  • Prosciutto
  • Baby spinach
  • Sun dried tomatoes
  • Parmesan cheese

Without the meat

  • Eggplant
  • Onion
  • Tomato paste
  • Garlic cloves
  • Tinned, diced tomatoes
  • Tomato passata
  • Basil leaves
  • Oregano
  • Baby spinach
  • Sun dried tomatoes
  • Parmesan cheese

Method

  1. Dice the onion.
  2. Heat olive oil in a fry pan and cook the diced onion until soft and translucent.
  3. Into the same pan as the cooked onion, add tomato paste and garlic cloves and cook for a couple of minutes.
  4. Into the pan, add the tinned, diced tomatoes and tomato passata. Stir through the basil leaves and cook the mixture through.
  5. For the non-meat version, slice the eggplant lengthways, sprinkle with oregano and grill on either side.
  6. Flatten out the beef steaks with a mallet.
  7. Onto the flattened steaks, layer prosciutto, basil, baby spinach, sun dried tomatoes and parmesan cheese on top. Roll into a cylinder shape, use a skewer to hold together and seal in a pan.
  8. For the non-meat version, add all ingredients to the eggplant an roll into cylindrical shapes.
  9. Pan fry the beef in a fry pan.
  10. Spoon the sauce onto the eggplant.
  11. Put the sealed beef rolls into the sauce in a fry pan and simmer for half an hour.
