  • 2 ripe bananas
  • 5 eggs
  • 2 ½ cups almond meal
  • Pure vanilla extract
  • Sea salt
  • Coconut sugar
  • Cinnamon
  • Slivered almonds


  1. Separate the eggs to get the egg whites and blitz with an electric mixer until they are light and fluffy.
  2. Put the bananas into the mixing bowl and using a dork mash them with a fork until they are a gooey consistency.
  3. Add in the remaining ingredients and mix together.
  4. Once all the ingredients are combined, gently fold in the egg whites and pour into a baking paper lined loaf tin.
  5. Pre-heat the oven to fan forced 180 degrees and bake for 15 to 20 minutes. Test whether it is cooked by poking with a skewer and if it is baked it will come out clean.
